Chef Alessandro Consoloni is a professional who is passionate about cooking and culinary creativity.

His cuisine tells stories of taste, technique and emotion, designed to leave a lasting impression. He integrates the great Italian tradition with Asian influences, creating dishes with extraordinary roundness and depth of flavour.

The chef began his career at the age of 14, building up years of experience through comparison, research and continuous growth.
Inspired by Tuscan tradition and the cuisine of his grandmothers, he has enriched his style with international experiences and by working alongside chef Luciano Zazzeri.

From Michelin-starred cuisine to specialising in truffles, he has developed a vision based on respect for raw ingredients and simplicity of flavour.
